  • 750ml Brothers Toffee Apple
  • 2-3lb shoulder of pork
  • Soft brown sugar 3 tbsp
  • Smoked paprika 2 tbsp
  • Black pepper 2 tbsp
  • Coarse sea salt 2 tbsp
  • Celery powder 1 tsp
  • Onion powder 1 tsp
  • Cayenne pepper ½ tsp

Belly Pork Strip in Sticky Toffee Barbecue Sauce September 24 2018

  • 5 tsp Brothers Toffee Apple
  • 3 lb (1.35 kg) belly pork, trimmed and cut into 8 thick strips (trimmed weight 2 lb 8 oz/1.15 kg)
  • 1-2 tablespoons olive oil
  • 1 medium onion, chopped small
  • Black pepper
  • For the sauce:
  • 5 tablespoons Japanese soy sauce
  • 1 heaped tablespoon tomato purée

  • 1 fat garlic clove, crushed

  • 1 garlic clove, peeled and finely chopped

For Topping

  • 2 dessert apples, cored and finely chopped

BBQ Halloumi Kebabs with Red Onion & Apple Cider Chutney September 24 2018

  • 150 ml Brothers Coconut & Lime
  • 250g halloumi cheese, cubed
  • 1 red pepper, cubed
  • 1 yellow pepper, cubed

  • 150 ml Brothers Festival
  • 500g pork mince
  • 1 Cox or Braeburn apple, peeled & grated
  • 4 spring onions, finely chopped
  • 1 egg, beaten
  • Fresh sage or parsley finely chopped
  • 40g Cheddar cheese, cut into four even pieces
  • 4 ciabatta or burger rolls

For the salsa:

  • 3 Cox or Braeburn apples, cut into small cubes, not peeled
  • 1tbsp cider vinegar
  • ½tsp ground cinnamon
  • 2 spring onions, finely sliced

    • 2oz caster sugar
    • 2oz soft light brown sugar
    • 6oz self-raising flour
    • 4 medium to large eating apples

    • 50g dark brown sugar
    • 4 whole cloves
    • Warm through on hob (do not boil)
    • Reduce heat for 10 minutes
